This time of the year I am tormented by the
YUMMY
pumpkin recipes on Pinterest etc.
Unfortunately almost all of them call for
canned pumpkin and
pumpkin pie spice
neither of which are available in South Africa
I did a little research and found the following
two alternatives....
Pumpkin Pie Spice
4 Tbsp ground cinnamon
4 tsp ground ginger
4 tsp ground nutmeg
3 teaspoons ground all spice
Simply mix and store in an airtight container
Pumpkin Puree
Preheat the oven to 165 degrees (celsius). Cut your pumpkin in half, remove the seeds and lightly oil the cut surface.
Place cut side down in an oiled roasting dish.
Bake until flesh is tender. They say 30-45 minutes, but in my experience it usually takes a bit longer.
Cool until just warm, then scrape the flesh from the peel.
Puree in either a blender or food processor.

but with a newborn (yes, a newborn..... but more about my little Cupcake later)
it's a bit tricky.
