Quick Cake

Not sure about you, but I know I occasionally get a craving for cake or something sweet and often there isn't anything in the house to satisfy my craving. I stumbled upon this recipe a while back (wish I could remember where!) and tried it this weekend.


1/2 cup self raising flour
1/2 cup super fine sugar
2 level Tbsp cocoa
pinch of salt
1/4 cup sunflower oil
1/2 cup milk
1 egg
splash of vanilla essence

Mix all the ingredients in a bowl. This makes enough for 4 average size mugs. Grease mugs, fill approximately a quarter with batter and microwave for 3 minutes on high (keep an eye on them while they're in the microwave). If your mugs are oven proof you can bake at 180 degrees (Celsius) for 30-40 minutes, but then they wouldn't be "quick cakes" :-)

I didn't have any cocoa in the house so I substituted it with instant coffee which was yummy, but not as good as chocolate. In future I would serve in the mugs and pour a little chocolate hot fudge sauce over the cake and let it soak in a but. I'll see if my mom is willing to share her top secret hot fudge sauce.
