I wanted to do something unique for my friend Candice's birthday last weekend. Since she's such a gorgeous, sophisticated person I decided to go with something monogrammed.
I liked the idea of an "adult" flavor and went with coffee cake with chocolate chips baked in mini ice-cream cones, topped with chocolate mousse frosting.
The C's were printed with food colouring onto rice paper. If you don't have the equipment yourself, your local baking supplies store should be able to do this for you. I then cut them out and pasted them onto circles of rolled fondant (left in the oven at a very low temperature to dry them out).
I had so much fun baking these and watching our friends enjoying them!
