S’more Smores Please!

One of my favorite things is marshmallow fluff (the kind you buy in a jar). It’s hard to come by in South Africa and when you do find it it’s really expensive. So I did a little jump for joy when I found a recipe for meringue frosting in the book I got for my birthday. It is quick and easy to make and it turns out light and fluffy….. just like marshmallow fluff (but better).

4 egg whites

1 cup sugar

In a glass bowl, over boiling water beat the egg whites and sugar for 5 minutes. Keep beating for the 5 minutes, even after the mixture starts to fluff up. Remove from the heat and continue beating for another 5 minutes.

One of the first things that came to mind when I first made the meringue frosting was smores cupcakes. Rob’s sister, Debbie, loves smores and so I made a batch for her birthday.

Fill the cupcakes with nutella (I used that because we all love the nuttiness) or any other chocolate spread and top off with a generous dollop of the meringue frosting.


The glossy white frosting looked so gorgeous, but I couldn’t help myself and added a little sprinkling of food glitter. I’ll admit, since I found the glitter at my local baking store EVERYTHING has had a sprinkle of glitter over it.
