Disaster Recovery

Last week I bought myself these fabulous (or so I thought) cupcake moulds. I couldn't wait to get home and try them and dreamt of how I was going to decorate them. So it was with great anticipation that I set out to create some beautiful flower creations.

Much to my disappointment, they were an absolute disaster. I made sure that the cupcakes were completely cooled before I turned them out, but still the entire flower design stayed in the mould. By now I was running out of time (I was due at a birthday tea, with the cupcakes). Some quick thinking and I managed to recover what was left of the cakes and turn them into these little beauties.

I used my plain vanilla cake recipe and topped them with lemon glaze (a mixture of icing sugar and lemon juice).

Does anyone out there have any tips for using moulds like these? I'm still itching to get it right.

Happy baking!

  1. Hello Candice, I love your blog. And the cupcakes look beautiful. I have a suggestion for you. Have you tried spraying the molds with cake release?
I use Wilton cake release and it works wonders. Just a very thin layer, otherwise no icing will stick on the cupcakes.

  2. Thanks Laura
We don't have Wilton cake release in South Africa, but we have something similar that I'm sure will work.
